Cook Macaroni until al dente.
Melt butter in saucepan and add lour, cook and sirt to make a rue. Add salt and pepper and nutmeg.
Cook about 2-3 minutes stirring constantly. Add milk a little at a time, whisking all the time. Only add enough milk to make a thickened sauce. Add cheeses and sirt and cook until well blended.
Add Drained macaronie and stir well. Pour into a sprayed casserole dish and bake at 350 degrees for 30 minutes or until bubbly throughout.
To reheat in crockpot, mix mac and cheese with a little more milk and stir it up. Put in crockpot on low setting to heat.
